Pudina Chutney, also known as Hari Chutney, is a versatile chutney served with paranthas, tandoori snacks, samosa or pakoras. List does not end there …. I love to mix Pudina Chutney in my Rice Khichadi. In my kitchen, this chutney is often served with Tandoori Chicken and Tandoori Fish.
It is simply a combination of yogurt, fresh mint, green chilies, fresh ginger and lime juice. The only spice used in this chutney is Salt.
Hope you will make this lovely condiment to enhance the taste of your meals and let me know how it turned out for you.
How to make Pudina Chutney:
- Wash the mint and remove the tough part of the stem. Wash the green chilies. Peel the ginger and chop it roughly.
- In a blender, add the mint leaves, green chilies, chopped ginger, salt, lime juice and 2-3 tablespoons of yogurt. Blend it for about one minutes or until the mixture turns into a fine paste.
Note: Do not add all the yogurt at this point. Blending the yogurt will turn it in liquid form which will make the chutney very runny.
- Gently whisk the blended mint chutney with rest of the yogurt. Enjoy it with your favorite meal or snack!!
